The other day I made nachos for dinner, unhealthy I know, but the chips were unsalted…So there’s that. We had some avocados lying around and decided to make guacamole. Also M made some chicken fingers so I would have some meat for dinner. It’s super easy to make and doesn’t take long!
- Que Pasa Unsalted Tortilla Chips
- marble cheese (should’ve added more)
- green onions
You can always add jalapenos, olives, beef or whatever you like on your nachos
Bake in oven until cheese is melted. I set our oven to 300ºF, and baked it for about 5-10 mins (I just wanted the cheese to melt, I didn’t want the chips to brown)
Serve with homemade or store-bought guacamole, salsa and/or sour cream
For the guacamole, I modified the recipe from Chipotle, I forgot about red onions and don’t really eat jalapenos, so technically it was just avocado, lime and cilantro. It sort of just tasted like lime-y mashed avocado (couldn’t even taste cilantro- I’m not a fan of cilantro so I didn’t add too much to mine). I like avocado though and once it was mixed with the cheese, chips and salsa, it was fine. Obviously Chipotle makes guacamole 100 times better, but the homemade ‘guacamole’ helped fill me up since avocados are so rich.
